Types of Wines and How To Serve
White wines should be stored in the refrigerator prior to serving and served cold. White wines are generally served with fish and white meat dishes.
Red wines should be served at room temperature. Red wines are served with red meat dishes, salad and cheese.

Burgundy and Claret should be uncorked and placed in the room in which they are to served for several hours before serving. They can be paired with lighter meats.
Champagne is usually served with dessert, but it is perfectly proper to serve it with any course and all times during the meal.
