One recipe 2 cookies. Divide the dough in half and make two of my all time favorite cookies for the holiday season! Whip up a traditional peanut butter cookie recipe and then add chocolate candies to each to make them even a sweeter treat.

One recipe 2 cookies.  Divide the dough in half and make two of my all time favorite cookies for the holiday season! Whip up a traditional peanut butter cookie recipe and then add chocolate candies to each to make them even a sweeter treat.

Starting my holiday baking.  I like to make huge batches of cookies and freeze them for the holidays and also to have on hand during the winter months.  Easy enough to pull them from the freezer when you have company or need to send along a sweet treat for the office parties or school events. Today’s task is one recipe that makes two different cookies.  Double yum!

It is pretty festive in my house this morning.  My husband bought “Alexa” from Amazon.  He is a gadget guy.  I was all like I am never going to use that thing.  I eat everyone of my words.  She is playing every Christmas song I ask, setting my kitchen timers and I just found out she can read me audiobooks and answer my cooking questions.  I’m in love, AGAIN.

Onto what I am doing.  Making cookies!

Peanut Butter Blossoms and Peanut Butter Cup Cookies


Ingredients

    • 1/2 pound butter, softened
    • 1/2 cup plus 2 tablespoons brown sugar
    • 1 and 1/2 teaspoons vanilla extract
    • 2 1/4 cups flour
    • about 16 chocolate kisses and 16 mini peanut butter cups, wrappers removed
    • white or crystallized sugar for dipping dough balls into




How to Make the Dough

    • With a mixer, cream butter until fluffy.
    • Stir in sugar and extract, beating to incorporate it into butter.
    • Stir in flour, mixing until well blended.
    • Batter will be very stiff.

How to Make Peanut Butter Blossom Cookies

        • Take about 1 tablespoon of dough and roll into a ball with the palms of your hands. (About 1½” in diameter).
        • Roll balls in sugar. then place them on ungreased cookie sheet.
        • Bake at 350 degrees for 18 to 22 minutes, until cookie is just barely browned on the bottom and around edges.
        • Remove from oven.  Cool on cookie sheet for about 20 seconds.  Stick one kiss in center of each cookie.
        • Move cookies to wire rack to cool completely.  Store in an airtight container. You can make up all sorts of variations of this cookie by changing out the flavor of the kiss on top.  They come in cordial cherry, caramel, mint, raspberry – plenty of choices.

Or, just make plain ole’ peanut butter cookies. Which are excellent, as well.

How to Make Peanut Butter Cup Cookies

  • Take about 1 tablespoon of dough and roll into a ball with the palms of your hands. (About 1½” in diameter).
  • Roll balls in sugar. then place them into a Mini Muffin Pan.
  • Bake at 375 degrees for  8-10 minutes.
  • Remove from oven.  Cool on cookie sheet for about 20 seconds.  Stick peanut butter cup into in center of each cookie.
  • Move cookies to wire rack to cool completely.  Store in an airtight container.

    If you freeze your peanut butter cups and kisses prior to making your cookies they are easier to push into the cookie and hold their shape.

     

     

    One recipe 2 cookies freeze well.  I keep the baked cookies for the entire month of December in the freezer and remove tasty treats weekly. The extras that do not get eaten during December keep for at least two months.  The have never been around past that time 🙂
