Reuben Sandwiches

Happy St. Patrick’s Day!!  On today’s agenda is raking the yard, making Reuben sandwiches, visiting the zoo and then indulging in some green beer.

Here is a quick and easy way to enjoy a Reuben. Wonderful for deli meat or left over corned beef brisket.

Marbled rye bead

Corned beef sandwich meat from the deli
Swiss cheese
Russian dressing
Small onion

In a skillet add bagged sauerkraut and one chopped onion.  Brown the sauerkraut slightly and cook until the onion is soft.

Butter one side of marbled rye for each of your sandwiches and lay it butter side down on your skillet. Add one piece of Swiss cheese, corned beef slices, Russian dressing and then the second top buttered rye bread.

Grill the first side until golden brown.  Flip and grill the opposite.  Serve on a plate and enjoy!
