Mulberry Muffins

Mulberry Muffins

Mulberry Muffins

Foraged some mulberries this weekend. Yum!  Now, what to do with them all. First thing I wanted to try was a recipe for mulberry muffins because muffins freeze well. I mixed up a double batch of muffins using a recipe off Flickr.

I had to convert the measurements for US metrics. Hope you enjoy them as much as we do.

What are Mulberries?

If you are not exactly sure what mulberries are of course, they are a type of berry and are wonderful for eating fresh and in baked goods. You can read a little more about them here.

This was the first time that I had tasted one.  Pretty tasty!

Picking Black Mulberries

Beside getting them fresh, which I highly recommend by the way – I decided that I needed to make a variety of items.  Starting with the muffins because they have white chocolate chips included in the recipe. Mulberries and white chocolate chips HAVE to be excellent together, right?

Mulberry Muffin Recipe

2 cups self-raising flour
1/2 cup granulated sugar
1 pinch salt
4-1/2 tablespoons melted butter
2 eggs
1/2 cup milk
1/2 teaspoon vanilla extract
1/2 cup white chocolate chips
1-1/4 cups mulberries (with stems removed)

Preheat your oven to 400º F. Sift the flour, sugar and salt into a bowl and mix. Make a hollow in the middle. In another bowl, beat the eggs, and then mix in the milk, vanilla extract and melted butter. Stir these into the dry ingredients with a spoon or fork, and then stir in the mulberries and white chocolate chips. Spoon the mixture into muffin pans and press some white chocolate chips into the top of the mixture.

Bake for 20 – 25 minutes.
