Enchilada Sauce
Looking to use some of your garden produce up? Make this homemade garden enchilada sauce to use in your fresh dishes. The sauce freezes rather well too.
Materials for Making Homemade Garden Enchilada Sauce:
3 medium zucchini
6 large or green or red tomatoes
1 cup diced onions
4 cloves of garlic
1 cup hot water
1/2 teaspoon cumin
Blender
3 ounces green chiles
Saucepan
Directions:
1.) Remove and discard the seeds from three medium zucchini and cut the flesh into chunks.
2.) Combine zucchini in a blender with six large green or red tomatoes, 1 cup diced onions, four cloves of garlic, 1 cup hot water and 1/2 teaspoon cumin. Blend to puree. If you like it a little spice in your life, add 1 canned chipotle peppers.
3.) Pour into a saucepan, add 3 ounces of green chiles and simmer until thick.
